Gastón Sanchez | executive chef

A descendant of Cuban and Spanish bloodlines, Gastón discovered his passion for food at an early age, spending countless hours honing his skills in the kitchen with his grandmothers. After obtaining a dual degree in Culinary Arts and Business Administration, Gastón explored and refined his skills abroad, where he apprenticed with Michelin-Star chefs. He has also been a private chef for various celebrities, owned and operated his own restaurants and catering companies, was showcased on The Food Network’s Celebrity Dish cooking show, and recieved two Hyatt Excellence Awards.

Our GM is a man of many talents: In addition to spending two decades learning every aspect of the restaurant industry, from Lima, Peru, to the shores of South Florida, he’s also a Marine Corps veteran, a saber fencing enthusiast and the author of a half-dozen fantasy novels. (And those are just the skills we know about.) Like many midwestern boys, Jason grew up trapping, fishing and hunting in his native Wisconsin; at age 14 he gave up his paper route to work as a cashier in a restaurant, and he never looked back. After his military service, Jason built an illustrious career in fine dining that has earned him eight Wine Spectator Awards, among others accolades. Outside of work, you can find him enjoying a fine cigar or hanging out with his wife and three children.
